Food Allergy vs Sensitivity:

Many people think they are allergic to a food when in fact they have food intolerance/sensitivity, a much more common cause of symptoms such as digestive disorders, weight gain, and chronic migraines. While true allergies are associated with fast-acting immunoglobulin *IgE responses, it can be difficult to determine the offending food causing an intolerance because if the immune system is involved, the response is likely to be *IgG mediated and takes place over a prolonged period of time, any where from 8 hours to 3 days later. Thus the causative agent and the response are separated in time, and may not be obviously related.

Food intolerance or food sensitivity is a delayed negative reaction to a food, beverage or food additive; a true food allergy occurs within minutes of ingesting the triggering item. Food sensitivity is less directly related to the immune system than are food allergies. It is often caused by the absence of specific chemicals or enzymes needed to digest a food substance, such as lactase deficiency. The precise medical differences between food intolerance and allergy are unclear to many patients.
